4、Description: Sodium Acetate occurs as colorless,transparent crystals or as a granular,crystalline or white powder. The anhydrous

form is hygroscopic; the trihydrate effloresces in warm,dry air. One gram of the anhydrous form dissolves in about 2 mL of water;1g

of the trihydrate dissolves in about 0.8 mL of water and in about 19 mL of alcohol.

5、Application: Used as buffering agent, flavoring agent, fragrance enhancer and pH regulator, meat preservative. As a buffer for

seasoning, it can alleviate bad odor and prevent discoloration, and improve flavor when using 0.1% ~0.3%. It has a certain anti-

mildew effect, using 0.1% ~ 0.3% in fish and meat mince products and bread to control the sticky phenomenon caused by fungi. It is

also used for the preservation of cereals with high water content. It can also be used as a sour agent for sauces, sauerkraut,

mayonnaise, fish cakes, sausages, bread, rice cakes, etc. Mixed with methyl cellulose, phosphate, etc., used to improve the

preservation of sausage, bread, rice cake, etc.
