10.Usage: Sodium Propionate in food industry main as a preservative and anti-mold agent. It inhibits the growth of a variety of microorganisms, including molds, yeasts, and certain bacteria. In acidic environment, the bacteriostatic effect is more significant. At a pH of 5.0, the minimum inhibitory concentration is 0.01%, while at a pH of 6.5, it is 0.5%. Sodium propionate is also used as dough conditioner, buffer, tissue improver, curing agent, nutrient supplement and chelating agent. In baked goods, it can be used as a leavening agent to help produce a fluffy texture. In the brewing industry, sodium propionate can enhance the capacity of saccharification and fermentation. In short, sodium propionate is an important food additive, which can improve the taste and appearance of food while ensuring food safety.
